Miso Baked Tofu
Hanging out at respite again, we all decided to pitch in for dinner. C's mom was telling me about this amazing miso baked tofu recipe she'd made the night before, and was all stoked to do it again. I didn't object.
We all loved it! :) So much so that we've made it a couple times since then, and I plan to make it at home soon, too! DO make this for dinner tonight!! Great on it's own, but would be fab in a stirfry, too :) Promise you will luuuurrrrve it <3
The rest of dinner was quite simple: steamed broccoli, cauliflower, & carrots; some sundried tomato-stuffed olives out the jar; baked potato drizzled with flax oil, sea salt & black pepper; and last but most certainly not least, creamy vegan split pea soup. (The soup came in a refrigeratable package, but the brand name seems to have seeped out of my brain...oops.)
