Mixed Berry Ganache Fudge Cake




Never before in my life have I eaten something so rich, so decadent, so creamy, so satisfying, and yet SO HEALTHY!! No sugar, gluten, grains, dairy, eggs, NOTHING that could make your arteries suffer. I walked away from this feeling energetic, rather than fat. (Though it's pretty hard for me to actually get fat, I hate the feeling.) Anyhoo, I give full credit to Ani Phyo. Her recipe actually calls for raspberries, rather than mixed berries, but that's all I changed in the recipe. Mixed berries are what I had in the freezer, and it really doesn't matter. Use fresh or frozen, whatever floats your boat. Her recipe also calls for only 1/4 tsp sea salt, but I used probably about 1/2 to 1 tsp. (I don't measure spices.)

This is, hands down, the BEST cake I have ever had. EVER. There was a vegan chocolate fudge cake that I ordered repeatedly in Thailand, because I couldn't get enough of it. That was two years ago, and I haven't dreamed about it often ever since. But this cakes tops it! If you like dense, fudgy, rich chocolate, this is your dessert ;)

It may shock you that there is an avocado in the icing, but trust me; it's what makes it creamy. I promise you will LOVE this cake!

Ingredients:
Fudge cake:
3 cups walnuts (soaked & dried)
2/3 cup cacao powder
1/2 teaspoon sea salt
1 cup pitted Medjool dates
Frosting:
1/3 cup pitted Medjool dates
1/4 cup agave nectar
1 medium ripe avocado
1/3 cup cacao powder
Filling:
1/2 cup of your favourite berries

Directions:
1) For the cake, toss your walnuts, cacao powder, and sea salt into the food processor and chop until finely ground. Add in the dates, and pulse to chop. Remove "batter," and form into two patties. Set them aside.
2) For the frosting, dates & agave go into the processor first. (No need to wash the food processor, pretty much the same ingredients going in!) Once mixture is smooth, add the avocado. Process until smooth. Lastly, add the cacao powder, and process until smooth.
3) On one of the cake "patties," spread half the frosting. Top with berries, and then put the second pattie on top. Spread the top and sides with the other half of the frosting. (I had waaaay more frosting than that cake could handle, so I ate the extra :) Do it, there is NO guilt in this frosting!)
4) Slice, savour, learn what heaven tastes like <3
