The first time I discovered raw cuisine, I was in Thailand. And the first dish I tried was at a raw cafe, and it was spaghetti & "meat"balls. While I didn't get creative with the "meat" balls, I did want to try making spaghetti. It used to be my favourite meal, but I always feel hungry after pasta, even if I eat too much of it. Anyhoo, this was a filling meal, and I was pretty much able to get right up and dance after :) With little prep work, it's a fantastic lunch or dinner. While I was kinda hoping the sauce would look a little more red, I'm not sorry that I put green veggies in it. It tasted so incredible with everything in it.
Ingredients:
1 medium zuchinni, sliced with potato peeler into long, spaghetti-like strands
Sauce:
1/2 medium tomato, chopped
1/4 cup chopped zuchinni (from what didn't peel well)
1 clove garlic
1/4 cup mixed baby greens
1 teaspoon extra virgin olive oil
1/2 tablespoon juice from a lemon
1/2 a date, chopped. Eat the other half :)
2 teaspoons sundried tomatoes, chopped
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1 teaspoon Victorian Epicure Roasted Red Pepper Dip Mix (dried herbs, red bell pepper, spices, garlic, onion)
1/2 teaspoon sea salt
Directions:
1) Toss all ingredients into a small blender (LOVE my Magic Bullet <3)
2) Pour sauce onto zuchinni "pasta" strands. Love every bite :)

Yay!! You are using your Victorian Epicure spices!!! They are amazing in your salad dressing too Char, start trying them! Also happy you are enjoying your Magic Bullet! Can't live without it!

Yes, I love the spices!! Thank you sooo much! I may end up ordering more from you soon, haha, I want to try them all! I never thought to use them in salad dressings, but I bet that would be delicious. I'm going to try that soon, and will post a blog :)
Thank yooouuu for introducing me to the Magic Bullet! I use it EVERY DAY, lol. I haven't even had it long and already I can't live without it either :P
