I promised there would be a lot of carrot-type recipes ;) and this one is as sure to please as the previous one! I kept the carrots raw, to balance out this dish, & it compliments the cooked yams well. Instead of everything be really mushy, it has a nice texture to it. The maple syrup & cinammon sing out loud in this recipe, and the whole thing just blends well together. lovelovelove it! Ummm, li'l warning? I may turn orange :) adore me anyways?

Directions:
1) Cook chopped yams in hot water on the stove, until tender when pierced with a fork.
2) Meanwhile, destroy carrots in your food processor & set aside.
3) When yams are done, drain water and return yams to the pot. Add destroyed carrots, sea salt, maple syrup, & cinammon; mash mash mash!!
4) Once everything is well mashed together, add chopped pecans. Stir to mix well.
5) Serve immediately, or store in the fridge.
