Green Goddess Pasta

Soooooo, remember that obsession I've had with raw pasta lately? It hasn't left, & I doubt it ever will :) I created a creamy, light & delicate sauce, with all kinds of green goodness. Hence, the name 'Green Goddess.'  The avocado makes the sauce taste buttery/creamy. So tasty! Feel free to add in extra seasonings to your liking. I enjoyed this as is :)

Ingredients:
Sauce:
2 medium tomatoes, chopped
1 avocado, peeled & pitted
1 bunch Italian parsley
1/4 green onions, chopped
1 cup greens (spinach, kale, whatevs)

Noodles & Toppings:
1/2 cucumber, spiralized
1 yellow zucchini, spiralized
3 tbs red pepper, diced
4 crimini mushrooms, sliced

Directions:
1) In a food processor, combine all sauce ingredients & process until smooth.
2) In a bowl, toss desired amount of sauce with spiralized cucumber & zucchini.
3) Place pasta on a plate. Top with red pepper & mushrooms.
4) Eat green, live green, be green. It's easy :)
