KALE CHIPS!! OM NOM NOM

OMFG. Seriously. I have no words.
These taste exactly like sour cream & onion chips to me. And, well, that's a big deal. I'm not a chip person, but that was the ONE flavour that could make me weak in the knees. BBQ, Ketchup, Salt & Vinegar...I can bypass 'em all. In my non-vegan days, I couldn't open a bag of sour cream & onion chips without devouring the whole thing. Alas, it has been about 3 years since I have been able to indulge in those deliciously sinful waist-plumpers. But, thanks to this new recipe, I've got my treat back! :D
I can't take any credit for this. I work with a nutritionist who has been a raw foodie for 2 years. Her name is Jessica Rosychuck, and she shared her amazing recipe with me :)
The first time I tried them, she brought them in to work for us to sample. They were amazing!! She had dehydrated them fully, to make them just like chips. Dehydration is optional. You can eat this as a salad, slightly wilt it, or dehydrate fully. I devoured half of them while trying to load my dehydrator trays (one handful for the dehydrator, one handful for my mouth!) It was amazing as is, but I wilted it until it was just a little crispy. I kept trying to stop eating them, because I wasn't even hungry; they were just so good!! My brother actually asked if I needed a muzzle!! LOL, sometimes I do around food...

I'm sad to say, though, after spending a few hours in the kitchen preparing my meals for the week, the life of my food processor has come to an end :'( I couldn't be more heartbroken; it was my favourite toy. Soooooo, while I'm in the process of getting a new one, I will try to use my imagination for new recipes.

By the way, this recipe for "rawmesan" is deadly. I was eating it by the spoonful. With the way I've been discovering food lately, I may start sporting a "food baby" :P (read: chubby tummy.) Enjoy!

Ingredients:
2 heads of kale, chopped

Dressing:
2 cups cashews, soaked
2 lemons, juiced (about 4tbs)
1 small shallot
3-5 cloves garlic
1 tsp rainbow peppercorns
1 tsp original herbamare
2 tbs himalayan pink salt
2 tbs olive oil

Rawmesan:
1 cup pecans, soaked
1 cup nutritional yeast
1 tsp sea salt

Directions:
1) Blend all dressing ingredients until smooth and creamy. Massage into chopped kale greens.
2) Process rawmesan ingredients, and mix into kale.
3) Enjoy raw, or dehydrate to desired texture. Try to share.
