Salsa Salad!

Summer is here! & the abundance of fresh veggies & fruit is amazing. Nothing is more beautiful than a vibrantly colourful garden in your dish!
I’m trying to eat more lowfat foods, as I find they are easier to digest & I have much more energy. So, the salsa came in, rather than the regular oil & vinegar dressing.
If you want to make salsa, you can check out the one I made! Or, use the Black Bean & Corn Salsa that I used, made by Newman's Own. Your choice!

Ingredients:
2 cups mixed greens (kale, spinach, whatevs!)
1 zucchini, spiralized
1 carrot, spiralized
¼ cup bean sprouts
½ cup chickpeas
¼ cup salsa

Directions:
1) Toss all ingredients together.
2) Eat.
3) Dance.
4) Laugh.

That is a great looking salad. I have been wanting to sprout some garbanzos, so now I really must do it.
