Student Pizza

For this recipe, there truly was no method to my madness. I had a ton of peppers in my fridge, & nothing else. This is perfect for those of us who are budgeting, wanting something quick and light, and wanting to use up extra, random veggies. Don't stick with just peppers: you can add mushrooms, spinach, tomatoes, dairy-free cheese, whatever! Use whatever amazing seasonings come to mind. While so simple, this tasted soooo yummy! :) The center of the tortilla, under all the veggies and sauce, was tender and soft, while the edges started to crust, like an authentic pizza shell! Try it try it try it! :D

Ingredients:
1 gluten-free tortilla shell
1/4 cup tomato sauce
2 cloves garlic, minced
2 tsp basil, dried
2 tsp oregano, dried
1/2 yellow pepper, chopped
1/2 orange pepper, chopped

Directions:
1) Preheat oven or toaster oven to 350 degrees.
2) Spread tomato sauce evenly on tortilla, spreading out to about an inch from the edge. Sprinkle on seasonings.
3) Top with whatever veggies you have! Bake for about 10-15 minutes, until edges of the tortilla are golden.
4) Munch time!
