Avocado Apple Wraps w/ Creamy Curry Cashew Dip

mmmmmm avocados are beautiful! :)

I made this recipe back in December when I entered it in a recipe contest. Though it did not win the contest, it's still a winner to my tastebuds ;)

I obsessed over it for so long, trying to make it perfect. I toyed with recipe ideas in my head for weeks before making this. This is how it all came together:
I loooove the idea of apples and cinnamon together, and cinnamon also pairs well with curry. Deciding what should sit with the apple in the wrap (besides lettuce) was hard, because everything seemed like it would clash. I tried cucumber, but all it did was add bland, crunchy, watery-ness. I decided I needed something butter-y, with a delicate flavour...avocado to the rescue!! :)

So yes, these flavour combos might seem kinda odd at first, but give it a try. I promise you will loooove! :) Even my non-veggie roomie loved these...but he usually loves my food :p

Ingredients:
Creamy Curry Cashew Dip:
1/2 cup cashews, soaked at least 4 hours
1/4 cup + 2 tbs coconut mylk
3/4 tsp curry powder
1/2 tsp agave
1/4 tsp cinnamon

Wraps:
3 rice paper wraps
1 small avocado, peeled, pitted, & sliced
1 golden delicious apple, cored & sliced
2 leaves red lettuce

Directions:
1) Process cashews in a Magic Bullet or small blender until finely ground. Add remaining curry dip ingredients and process until smooth. Taste, and adjust seasonings if needed. Set aside.
2) Wet a rice paper wrap in warm water so that it is pliable. Place one leaf lettuce, 1/3 the avocado, and 1/3 of the apple onto the wrap. Roll it up like a wrap and slice in half.
3) Repeat step two for remaining wraps.
4) nom nom nom.
optional: ditch the rice paper wraps & just wrap everything in red leaf lettuce to make it raw :)
