Remember when I made an avocado roll...without the roll? Weeeell, this one is even better! I was having a major sushi craving (they seem to come around every few days or so), and didn't have time to make a roll...because it was breakfast and I had to head to work :p Thankfully, I had some cooked basmati rice in the fridge and decided it would work for a sushi mash!! :D Probably the yummiest, most random breakfast I've had in a long time (not including my smoothies...because I freakin' luuurrrve my smoothies <3).
Do you take short-cuts with certain foods? Do they end up tasting just as delicious?

Ingredients:
1/2 cup cooked rice
1 tbs rice vinegar
1 tbs mayo
1 tsp agave nectar
pinch sea salt
1/2 ripe avocado, mashed
1-2 tbs Bragg's soy seasoning
1 nori sheet, torn into pieces
1 tbs sesame seeds
Directions:
1) Mash mash mash!! :D :D
2) Eat eat eat!! :D :D

Brown Rice Avocado Roll
Sorry for the lack of posting lately, foodies! My laptop wasn't opening web pages for a few days... not really sure why that is, but I guess even computers get cranky sometimes. But forget that, on to the FOOD! :)
Ever since I learned how to make homemade sushi, I've had so much fun preparing it for myself. I have yet to make anything other than avocado rolls, though :P They're my fave! But I may try stuffing in some enoki mushrooms. OR... mayhaps some yam rolls? I think so :)
This is an inexpensive and fun way to enjoy sushi, especially if you make it with friends. You can use brown rice instead of white to keep it healthier, and when you make food for yourself, you are more likely to love and appreciate it. Pass the chopsticks, pwease! :)

Chocolate Whoopie Pies & Homemade Sushi
My last day of respite for the next three weeks had to be special. I'm going away to Edmonton, Alberta to visit family & friends, so I won't be around for the holidays. So what was our plan? Make a ton of food together :D
C and S got this Chocolate Peppermint Whoopie Pie Mix from their auntie, so I brought over my almond mylk, egg replacer, & soy butter to keep it vegan. We lucked out: the mix was vegan, so all we had to do was add more vegan ingredients :D Now obviously I'm not saying this is healthy, but come on...it's Christmas!
These were really easy to make: Just follow the package directions! We were licking the beaters & spatulas after, for both the cake batter & icing :) mmmmm. The little peppermint crumbles (pictured), make them even more perfectly festive.
Remember how I said awhile ago that I suck at making sushi? WELL, I learned today that making sushi with cooked rice as opposed to all raw veggies is much, much easier than I thought it would be. I brought my bamboo sushi mats over (which I bought in Thailand!), & everyone had so much fun making their own rolls. Oooohhh, & that fab dish on the side? Sweet Sesame Spinach & Tofu, a recipe created totally on a whim :)

As gifts for all of them, I brought a bunch of Char Stars with me, both flavours, for them to have (they used to be called Char Bars, which is the reason for the hand & feet shapes). To the left are the Chocolate Almond Creamy Crunch Char Stars.

And finally, it was my turn to get presents :) C gave me Xocai chocolate, which is supposed to be incredible, & very good for you! S made earrings for me!! Aren't they gorgeous? I'm wearing the really colourful ones right meow :)

Sweet Sesame Spinach & Tofu
Ingredients:
1 tbs coconut oil, for frying
4 cloves garlic, minced
2/3 block firm tofu, pressed & crumbled.
1 tbs sambal oelek
2 bunches spinach, chopped
Bragg's, to taste
water, as needed
2 tbs sesame oil
1/4 cup sesame seeds
Directions:
1) In a large wok over medium heat, fry the garlic in coconut oil until golden. Add in the tofu & sambal oelek; continue to cook, adding Bragg's as needed.
2) Once tofu is nicely browned, add spinach & just enough water to help steam, about 2 tbs. Cover dish & let simmer until spinach is wilted.
3) Remove from heat & stir in sesame oil & seeds. Serve warm.
Sushi Rice
Ingredients:
3 cups sushi rice
3 cups water
3 tbs rice vinegar
3 tbs agave syrup or sugar
3 tbs sea salt
Directions:
1) Wash sushi rice, rinsing well.
2) Put rice & water into rice cooker & allow to cook.
3) Once cooked, gently add rice vinegar, agave syrup or sugar, & sea salt. Set aside & allow to cool before using.
**While I could try to explain how to do the rolling, it's much easier to watch a video ;) Add in whatever ingredients you like: my rolls held avocado, mushrooms & cucumber! nom nom nom

Sushi...Without the Roll ;)
The other day, I had an intense craving for an avocado roll. Not wanting to spend a lot of money on my meal, & also remembering the other half of my avocado sitting in my fridge, I decided to make something up at home.
Because I suck at rolling sushi and was feeling too lazy to practice, I decided to just toss the avocado, rice, & soy sauce together...& add broccoli! 'Twas freakin' delicious. Even better if you toss in bits of nori :)
I'll start practicing more with sushi, because I think it would be a lot of fun. But for now, enjoy this dish!
From my kitchen, to yours <3
Ingredients:
1/2 cup dry rice
1 1/2 cups water
1/2 avocado, peeled, diced & pitted
1 cup frozen broccoli
Bragg's seasoning, to taste
optional: nori sheets, torn
Directions:
1) Toss rice & water in rice cooker and turn it on. When the water is almost absorbed (about halfway through cooking), add in the broccoli.
2) When the rice & broccoli are cooked, toss all ingredients together on a plate. Ta da!
